Mango Season in Kolkata, India
Different kind of Mango could be found in India.
The best one is Alphonso mango (it is very sweet). The rest type of mangoes will be Safeda, Chausa, Dasheri, Kesar, Gulab Khas, Himsagar, Langra, Raspuri, totapuri.

Below I had few recipes that I create using Indian Mangoes.

Mango iced tea



Ingredients:
1 tbsp black tea leaves (Assam/Darjeeling) or tea bags
1 liter water
2-3 tbsp sugar
200 gram sliced mangoes

Method:
1. Bring the water to boil.
2. In a jar, add the black tea leaves and sugar. Pour the hot water into the tea leaves. Steep it for 3-4 minutes.
3. Strain out the tea leaves. Let the tea cool down in fridge or in room temperature.
4. Slice the mangoes and keep it in the air-tight container. Keep it in the fridge.
5. In a glass, add some ice cubes and sliced mangoes. Top it up with cold tea.


Mango chili


Ingredients:
200 gram mango puree
200 ml orange juice
Pinch chili powder
Pinch salt
Dash of lemon juice (optional)
¼ slice of lime/lemon

Method:
1. Blend the sliced mangoes in mixer or Mash it with fork.
2. in a plate, mix salt and chili powder. Keep it aside.
3. Use a quarter sliced of lime to go around the rim of glass/tumbler. Dip the rim of glass/tumbler on the mixture of salt and chili powder.
4. Add few ice cubes into the glass.
5. Add 2-3 tbsp mango puree and top it up with orange juice.
6. Garnish it with few mint leaves.


Mango Sago

Ingredients:
1 cup cooked sago pearl
200 gram sliced mangoes
200 ml coconut milk
50 gr sugar/honey

Method
1. Rinse the sago pearl; cook the sago pearl with 3 cups water. Bring water to boil; add the sago pearl; keep stirring it to avoid sago pearl stick at the bottom of the pot. Cook the sago until transparent for 10-14 minutes. In the last few minutes, switch off the heat and let the heat cook the sago. Strain out the sago pearl, rinse it with cold water.
2. In a Blender, Blend 100 ml coconut milk, 50 gram sugar and 200 gram sliced mangoes. Keep some sliced mangoes for garnish.
3. In a bowl or glass, add 2-3 tbsp cooked sago pearl, top up with 2 tbsp coconut milk and the blended mango puree. Garnish with sliced mangoes.

Mango Shake

Ingredients:
200 ml milk
200 gram Slice mangoes
2 tsp Sugar/honey
Ice cubes

Method
1. Blend all ingredients in a blender/mixer with few ice cubes.
2. Mango shake is ready.

Mango smoothies

Ingredients:
100 ml milk
100 ml yogurt
200 gram Slice mangoes
2 tsp Sugar/honey
Ice cubes

Method
1. Blend all ingredients in a blender/mixer with few ice cubes.
2. Mango smoothie is ready.



Mango Salad


Ingredients:
200 gram sliced mangoes
2 pieces tomatoes
1 piece cucumber
1 piece capsicum
1 piece carrot
1 tbsp olive oil
1 tbsp chopped coriander
Pinch cumin powder (optional)
Pinch salt
Pinch pepper

Method
1. Slice tomatoes, cucumber, capsicum, carrot into cubes/ julienne as your desire.
2. Place all sliced vegetables in a bowl, Add the olive oil, pinch salt, pepper and cumin powder. Mix it well.
3. Add the sliced mangoes and chopped coriander into the vegetables mixture.
4. Adjust taste accordingly.
5. Mango salad is ready

Mango chia pudding


Ingredients:
2-3 tbsp chia seeds
200 ml milk
200 gram sliced mangoes/mango puree
1 tbsp honey/sugar

Method:
1. In a bowl/air-tight container, mix the milk, honey/sugar and chia seeds. Cover the bowl/container.
2. Keep the container in the fridge overnight. Let the chia seeds expand.
3. The next morning, Top up the chia seeds pudding with mango puree or sliced mangoes and muesli.

Overnight oats with mango puree


Ingredients:
6 tbsp rolled oats
1 tbsp chia seeds
250 ml milk
200 gram sliced mangoes/mango puree
1 tbsp honey/sugar

Method:
1. In a bowl/air-tight container, mix the milk, honey/sugar, rolled oats and chia seeds. Cover the bowl/container.
2. Keep the container in the fridge overnight. Let the rolled oats and chia seeds expand.
3. The next morning, Top up the oats with mango puree or sliced mangoes.
